STAFF SPOTLIGHT: MEET CHEF JOSE

Latuli’s Chef Jose brings a wealth of culinary experience and a deeply personal story to the kitchen. Long before working in some of New York City’s most acclaimed restaurants, Jose spent his childhood on the water back home, learning to fish alongside his older brother. Those early lessons in patience, discipline, and respect for nature became the foundation of his cooking.

Jose moved to New York City in 2007 and began his restaurant career as a dishwasher at Lupa Osteria Romana. Within three months, he was promoted to butcher, eventually moving onto the line and rising to sous chef. He later joined Chef Mario Carbone to help open Parm Restaurant, returned to Lupa as executive sous chef, and went on to become executive chef at Pecora Bianca in 2018.

Outside the kitchen, Jose enjoys spending time outdoors with family and friends. A proud father of three, he brings humility, hard work, and a lifelong respect for the craft of cooking to Latuli’s kitchen.
