Blue Horizon stocks a wide variety, including local Red Snapper, Grouper, Amberjack, Gulf Wahoo, Chilean Sea Bass, Steelhead Trout, Faroe Island Salmon, Halibut, Arctic Char and Sea Scallops, as well as Gulf-farmed oysters. Chef Bryan has worked with Blue Horizon’s core team since his days at Reef — two of the company’s fish butchers are former Reef employees he personally trained.
