What I’m Drinking: Wine of the Month
2022 Sylvain Pataille, Fleur de Pinot, Marsannay Rosé
100% Biodynamic, 80-year-old vines, 3-4 day maceration, indigenous yeast fermentation, minimal added sulfur.
This is a very unique wine fashioned by one of the most highly regarded vignerons in Burgundy. The wine is whole cluster fermented and then aged for two years in extremely large casks called demi-muids. The result is a complex, subtle, and delicious wine that is somewhere between a Rosé and a chillable red. The nose exhibits an exotic tea and rose petal combination. On the palette, there is blood orange, mulled strawberry, and mulling spices. The texture is subtly juicy enough to give the wine support and lift while a bright minerality pierces the finish. The wine pairs with heirloom tomatoes, Ahi Tuna, and the love of a Valentine's Day couple.
