ALLISON KNIGHT

Owner & Director of Operations

Uniting people at the communal table is second nature for Allison Knight. Her passion for recognizing life’s many joys through memorable dining is evident in every aspect of LATULI. Effortlessly combining her business acumen, discerning palate and design aesthetic, she has thoughtfully envisioned a distinctive, casual-chic neighborhood restaurant where every meal speaks to the pleasures of family, friends, and the deep connections Houston has with its diverse food culture.

Having moved to Memorial in 2019 with her husband Tucker and their three children (Lawson, Tucker and Lillie, whose amalgamated names form LATULI), Allison quickly saw the area’s dearth of innovative, independent, chef-driven restaurants. Inspired to expand her own culinary range with more accomplished cooking, she enrolled at Culinary Institute LeNôtre in 2020. The French-owned culinary college not only formalized her gastronomic training, but it also is where she embraced the concept of “mise en place” (French for “everything in its place”) – an organizing principle that ensures success in the kitchen.

With valuable new skill sets in hand, she embarked on a dream to combine her passions for food and home entertaining by opening the type of casual but seamlessly polished restaurant that didn’t exist in Memorial. Teaming with renowned chef and restaurateur Bryan Caswell, Allison has brought to fruition a collaborative vision that savors the South, glorifies the Gulf and toasts to Texas. LATULI is their heartfelt celebration of family bonds, committed friendships, and the very real power that food has to bring people together.

LATULI is where guests will truly find everything in its place.
